Refreshing summer salads with seasonal veggies and herbs


It’s peak summertime in Speedway, which means all of the best flavors like mint, basil, lemongrass, cucumbers, tomatoes, strawberries, and peaches can be found in abundance at farm markets and grocery stores around Indianapolis. Chopped dill and scallions pack so much flavor into this salad, and the arugula has a naturally earthy, tart, and peppery taste. It pairs well with a simple lemon vinaigrette dressing.

If you’ve ever grown your own potted mint in a sunny window, you know it requires very little attention in order to thrive, so you’ll have plenty left over from your summer mojito for this sweet and tangy cucumber salad that just needs 20 minutes to marinate in the refrigerator to enhance the bold flavors of the onion and white wine vinegar.


Zucchini Tomato Basil Salad

Heirloom tomatoes always pair well with fresh mozzarella, and a fresh basil and lemon vinaigrette dressing drizzled over it is the perfect finishing touch. You can also try it also with roasted or sundried tomatoes and a balsamic vinaigrette.


Healthy Thai Salad with Lemongrass Dressing

This homemade Thai lemongrass dressing it what makes this salad so good, and if you’ve never prepared lemongrass before, it’s very easy to make a paste from olive oil, ginger, garlic, shallots, and one stalk of lemongrass. (You can buy prepared lemongrass paste or just use minced lemongrass!)


Heirloom Tomato and Chive Flower Salad

A subtle oniony flavor from the chive flowers makes this salad truly unique– and pretty, too! Chives usually bloom in early summer, so if you can’t get your hands on the blossoms, the green chive stalks can be used to add flavor as well. 


Summer Corn Salad

People seem to either love or hate cilantro, so if you’re among the latter, you can leave it out of this recipe and the other flavors will more than cover for it. A simple lime vinaigrette dressing adds tangy flavor, and the chili powder and garlic give it a nice kick.


Fresh Peach Salad

Here is your quintessential summer salad packed with peaches, crumbled cheese, and toasted almonds. And the red onion and balsamic vinaigrette provides the perfect balance of sweet and savory flavors.
