Recipes for your spring and summer harvest

Broccoli, beet, kale, and brown rice bowl with pesto

If you’re a big fan of tossing things into a skillet for a quick weeknight superfood fare, this one is for you. It knocks out three seasonal veggies in one dish, and because it contains brown rice and pesto, it’ll fill you up too!

Kohlrabi, turnips and green peas

Here’s another recipe that includes three vegetables in season right now. Kohlrabi is also known as a German turnip, even though it’s in the same family as cabbage, broccoli, and kale. It might sound exotic but it’s grown right here in Indiana, and because it’s packed with calcium and magnesium, it can also contribute to stronger bones. Win-win!

Kohlrabi potato salad

A new twist on an old favorite for your backyard barbecue. The fresh dill gives it a zesty kick!

Lemony collard greens and pasta

Here’s a pasta dish that’s not too heavy for a summer day, and the thin-sliced sauteed collard greens make it bold and fragrant.

Kale and spinach salad with apples and cherries

The tart lemon dressing in this flavorful salad makes it smell just as fresh as it tastes. It’s easy to make and offers a variety of

Dill pesto potato wedge salad

Get a little fancy with your potatoes! (Or if you’re more in the mood for comfort food, you can’t go wrong with Julia Child’s garlic mashed potatoes, or herbed French fries with grated parmesan!)

Grilled summer squash with lemon scallion dressing

This one will be another hit at your backyard barbecue, and also allows you to take advantage of fresh green onions.

Summer cherry-berry fruit salad

Here’s a healthy and vibrant dish you can enjoy all summer long. At a glance, it might look like a very basic bowl of berries, but the mint, lemon, and dash of cinnamon and cardamom make it unique and flavorful.
